JamesP I think that there are a few places in the main bay for SUP's for rent.  At Swell surf camp, we do lessons, which include the rental of the board and instruction for at least 2 hours.  www.swellsurfcamp.com

For the waves, the main bay at Bozo has a lovely SUP wave during the summer if you are a beginner and bigger ones from Oct-April.

  Enjoy your vacation!

I just opened a Sup school in Punta Cana. This is generally a flatwater spot for cruising along the coast in crystal clear waters. There is a surf break called Macao but it is inconsistent and you have to be lucky to catch it going off.

Cabarete has some great SUP spots.
We surfed the reef of off  cabarete's Bozo beach with the Swell crew.

Empty waves,  make sure you go early though, wind might mess things up a bit.

Otherwise Encuentro is also good.
